Add whatever fruits you have on hand to the dragon fruit and mint. This salad has bananas, apples, peaches, and oranges.
Fruit Salad with Dragon Fruit and Mint

1 dragon fruit
4 fresh mint leaves
1 banana
1 apple
1 peach
1 valencia orange
1 Meyer lemon
agave nectar (not syrup)
Directions
- Peel and cube dragon fruit.
- Chiffonade cut mint leaves. Leave one of them whole for garnish if desired.
- Peel and cube or slice the rest of your fruit.
- Gently mix all fruit together in a bowl.
- Squeeze juice from the lemon and measure it.
- Measure half as much agave syrup and whisk into the lemon juice. Mix into fruit salad.
- Chill in refrigerator for at least 1 hour.
