Mediterranean Quail Egg Salad

This is a healthy Mediterranean salad of lettuce, cucumbers, tomatoes, and red onion. Just drizzle olive oil and squeeze some lemon over. Lettuces, tomatoes, eggs, and dill provide the color and cucumber adds the crunch.

Quail eggs taste like regular eggs it’s just that they’re smaller and they can be hard-boiled in minutes, just 3 minutes in a Instant Pot. If you don’t have access to quail eggs then use the smallest eggs you can buy. Asian stores usually sell quail eggs. First try a local farm. Larger eggs take much longer to hard boil and overpower the small cherry tomatoes. You can’t successfully slice a hard-boiled egg any smaller than a half.

Ingredients

  • 12 quail eggs hard-boiled, peeled, and sliced in half lengthwise

  • 2 large handfuls of mixed baby and mesclun lettuces

  • sea salt

  • 1/2 cup peeled and quartered cucumber

  • 1/2 cup cherry tomatoes halved

  • 2 tablespoons minced red onion

  • 1 Meyer lemon, cut in half

  • Extra virgin olive oil

  • 1 large sprig dill, leaves coarsely chopped

  • Freshly ground black peppercorns

  • 1/4 teaspoon Aleppo pepper (or sweet paprika and a dash of cayenne pepper)

Directions

  • Tear lettuce and mesclun leaves into bite size pieces, place in a bowl with a scant amount of olive oil and salt, and gently toss with your fingers.
  • Arrange on a salad plates.
  • Top with cucumbers, tomatoes, and onion.
  • Squeeze a little lemon juice over. Drizzle with olive oil.
  • Arrange the quail egg halves on the salad.
  • Top with dill. Grind a little black pepper over and sprinkle with Aleppo pepper.
