Lyxig Kalops (Swedish ‘Luxurious’ Beef Stew), Instant Pot

An Instant Pot version of an authentic, traditional Swedish beef stew cooked with vegetables, white peppercorns, and allspices berries. This dish was influenced by Britain in the 1800’s. Kalops comes from the English word “collops,” meaning slices or pieces of beef.

This can also be made in a cockpot (slowcooker) or a large pot on the stove top. Plan for the additional time to simmer the stew meat (at least 2 hours).

Serve with Anna’s Ugnsrostade Morötter (Anna’s Oven Roasted Carrots).

Swedish ‘Luxurious’ Beef Stew

Ingredients

  • 4 carrots, peeled

  • 2 tablespoons organic unsalted butter

  • 4.5 lbs Chuck stew meat, into 1″ cubes

  • sea salt

  • freshly ground white peppercorns

  • 4 onions, peeled and quartered leaving root end intact

  • 1 tablespoon red wine vinegar

  • 1 tablespoon tomato paste

  • 20 whole allspice berries

  • 4 white peppercorns

  • 3 bay leaves

  • 1 cup red wine

  • 2 tablespoons Worcestershire sauce

  • 4 cups low sodium beef bone broth or stock

  • 1 tablespoon cornstarch

  • 2 tablespoons filtered cold water

Directions

  • Cut carrots into 1″ pieces.
  • Generously season the beef cubes with salt and pepper.
  • Place cast iron skillet over high heat and add butter.
  • As soon as the butter melts add the beef cubes.
  • Working in batches so you do not steam the meat, cook it until it is well browned on all sides. Remove from heat and set aside.
  • Transfer butter to Instant Pot and set it on Sauté HI.
  • Add carrots and onions and sauté until the onion softens.
  • Stir in vinegar, tomato paste, allspice, peppercorns, and bay leaves.
  • Add wine, Worcestershire sauce, beef bone broth or stock, and browned beef cubes. Season with salt to taste. Don’t add too much salt at this stage you can taste and correct the seasonings later.
  • Pressure cook on HI for 20 minutes. Natural steam release.
  • Carefully open the Instant Pot lid. Taste the sauce and correct seasoning.
  • Whisk together cornstarch and cold water. Stir into stew until it is thickened.
  • Serve with Anna’s Oven Roasted Carrots.
