Ingredients

  • 2 ears corn, husked

  • 3 tablespoons extra virgin olive oil

  • 1/4 cup parsley leaves, chopped

  • 1/4 teaspoon sea salt

Directions

  • Place the cast iron skillet over medium high heat.
  • Add olive oil and heat until it shimmers.
  • Add the salt and the parsley.
  • Place the ears of corn in the skillet.
  • Use tongs to turn the ears until they are cooked on all sides, about 10 minutes. Do not let them brown.
