Air Fryer Duck Fat Roasted Potatoes

Air frying in duck fat gets the potatoes crispy and golden brown on the outside with super creamy centers. Smoked paprika adds a nice kick.

Anything cooked in duck fat is utterly delicious. It has a luxurious taste for a fat and a high smoke point.

Meyer lemon really amplifies the flavor and balances the duck fat. Never underestimate the power of an acid in a dish.

Ingredients

  • 1 lb Yukon Gold potatoes, about 2

  • 2 tablespoons duck fat, melted

  • 1/2 teaspoon sea salt

  • 1/4 teaspoon smoked paprika

  • 1 teaspoon finely chopped fresh rosemary or thyme

  • 1 tablespoon fresh Meyer lemon juice

Directions

  • Peel potatoes and cut into one half inch squares.
  • Soak them in a bowl of cold water for 30 minutes.
  • Drain and place on paper towels. Use additional paper towels to pat dry.
  • Place in a bowl and toss with duck fat, sea salt, and paprika.
  • Place in the air fryer basket. Air fry at 400°F until golden brown and crisp, 15 minutes. Stir the potatoes halfway through. Remove from the air fryer immediately when finished.
  • Arrange on a plate. Sprinkle fresh herbs if using. Squeeze lemon juice over.
