Authentic Guacamole

Whip up this versatile rich, creamy avocado concoction in minutes for a delicious taco topping, dip, sandwich bread, or side dish.

Ingredients

  • 2 tablespoons freshly squeezed lime juice

  • 1 teaspoon minced garlic from a tube

  • 1 jalapeño, halved, ribs and seeds removed, and finely chopped

  • 1 teaspoon sea salt

  • 1/2 yellow onion, finely chopped

  • 3 tablespoons chopped fresh cilantro leaves

  • 3 ripe large avocados

  • 1 San Marzano or roma tomato, chopped into 1/4 inch dice

Directions

  • Squeeze lime juice into molcajete or medium-sized bowl.
  • Add pinch of salt.
  • Mash garlic, jalapeño, 1/2 of onions and 1/2 of cilantro into lime juice.
  • Cut avocados in half, remove pits, and scoop flesh into bowl with lime juice mixture.
  • Use a whisk or potato masher to smush avocado until it becomes a chunky mixture.
  • Thoroughly mix in a little salt at a time to elevate the flavor of the avocado, taking care not to mash chunks.
  • Gently fold in remaining ingredients.
  • Press a double layer of plastic wrap directly onto the surface of the guacamole to keep it from browning until ready to serve.
