1 tablespoon cornstarch
2 tablespoonss filtered water
1 1/2 cups fresh or frozen blueberries, divided
1/2 cup sugar
1/2 teaspoon real vanilla extract
chopped fresh herbs, such as mint, basil, rosemary, sage, or thyme (optional)
Directions
- In a small bowl, whisk to dissolve cornstarch in water.
- Place all but 1/2 cup blueberries in a small saucepan. Stir in sugar.
- Add dissolved cornstarch and stir to bring mixture to a boil.
- Reduce heat and simmer for about 2 minutes, until sauce coats the back of a spoon.
- Remove from heat and stir in vanilla and remaining blueberries.
- Stir in fresh chopped herbs if using.
- Serve warm or chilled.
