Ingredients

  • 1 tablespoon cornstarch

  • 2 tablespoonss filtered water

  • 1 1/2 cups fresh or frozen blueberries, divided

  • 1/2 cup sugar

  • 1/2 teaspoon real vanilla extract

  • chopped fresh herbs, such as mint, basil, rosemary, sage, or thyme (optional)

Directions

  • In a small bowl, whisk to dissolve cornstarch in water.
  • Place all but 1/2 cup blueberries in a small saucepan. Stir in sugar.
  • Add dissolved cornstarch and stir to bring mixture to a boil.
  • Reduce heat and simmer for about 2 minutes, until sauce coats the back of a spoon.
  • Remove from heat and stir in vanilla and remaining blueberries.
  • Stir in fresh chopped herbs if using.
  • Serve warm or chilled.
