Buttered Peas with Green Onions

16 oz frozen organic green peas, not thawed
1 teaspoon sugar
2 tablespoons organic unsalted butter, room temperature
1 green onion
1/2 Meyer lemon, zested
1 leaf fresh basil, chiffonade cut (optional)
1/2 teaspoon sea salt
1/2 Meyer lemon
Directions
- Trim and discard the root and dark green leaf ends of green onions. Halve white and light green parts lengthwise and thinly slice crosswise. Set aside.
- Heat butter in a cast iron skillet over medium-high heat until the butter has almost melted.
- Stir in sugar until dissolved.
- Add frozen peas stir until they are heated through, about 4 minutes.
- Remove from heat.
- Add green onions, lemon zest, optional basil, and salt. Toss to combine.
- Squeeze Meyer lemon over.
- Use a slotted spoon to transfer peas to plates. Serve immediately.
