Green onions add a mild flavor and texture to the dish.

Ingredients

  • 16 oz frozen organic green peas, not thawed

  • 1 teaspoon sugar

  • 2 tablespoons organic unsalted butter, room temperature

  • 1 green onion

  • 1/2 Meyer lemon, zested

  • 1 leaf fresh basil, chiffonade cut (optional)

  • 1/2 teaspoon sea salt

  • 1/2 Meyer lemon

Directions

  • Trim and discard the root and dark green leaf ends of green onions. Halve white and light green parts lengthwise and thinly slice crosswise. Set aside.
  • Heat butter in a cast iron skillet over medium-high heat until the butter has almost melted.
  • Stir in sugar until dissolved.
  • Add frozen peas stir until they are heated through, about 4 minutes.
  • Remove from heat.
  • Add green onions, lemon zest, optional basil, and salt. Toss to combine.
  • Squeeze Meyer lemon over.
  • Use a slotted spoon to transfer peas to plates. Serve immediately.
