Baked Poor Man’s Lobster and Corn on the Cob

This is truly Poor Man’s Lobster if you just stick to using cod, rockfish, lingcod, or halibut. You can even use Alaskan pollock from your freezer section. Buy what is on sale. Even better if you catch it yourself.

You can optionally amp up the flavor, and the price, by adding fresh peeled shrimp, canned lump crab meat, or lumpfish caviar. Maybe some of those will be on sale at your market that day?

Add corn on the cob and you have a perfect outdoor summer meal. Serve with Classic Creamy Coleslaw and Bloody Caesars.

Ingredients

  • 1 cup crumbled Ritz crackers

  • 1 stick organic unsalted butter, room temperature; plus more for serving if desired, melted

  • 2 tablespoons minced celery

  • 2 tablespoons minced or grated yellow onion

  • 1 teaspoon minced garlic, from a jar

  • 1 can 6 oz lump crab meat (optional)

  • 1 lb flaky white fish such as cod, rockfish, lingcod, or halibut

  • 3 tablespoons cane sugar

  • 1 teaspoon sea salt

  • 1/2 lb fresh raw peeled shrimp, leave the tails on (optional)

  • 3 ears fresh corn on the cob, husked and cut in half crosswise*

  • 1/2 Meyer lemon, juiced

  • lumpfish caviar (optional)

  • paprika

  • finely chopped parsley

  • lemon wedges, for serving

  • melted butter, for serving

Directions

  • Preheat oven to 375°.
  • Cut the fish fillets into 2 inch cubes. Toss with sugar and salt. Set aside.
  • Use a fork to thoroughly combine cracker crumbs, two tablespoons of butter, celery, onion, garlic, and optional crab meat in a mixing bowl.
  • Cut remaining 6 tablespoons of butter and arrange it in the bottom of the casserole dish..
  • Arrange fish, optional shrimp, and corn halves in a casserole dish or uncovered Dutch oven.
  • Drizzle lemon juice over.
  • Sprinkle Ritz cracker mixture over. Press down lightly.
  • Dust lightly with paprika.
  • Place in oven and bake, uncovered until the flakes with fork, about 15 minutes. It’s critical that you don’t overcook it.
  • Garnish with optional caviar and parsley.
  • Serve with lemon wedges and optional melted butter for dipping.
