This is truly Poor Man’s Lobster if you just stick to using cod, rockfish, lingcod, or halibut. You can even use Alaskan pollock from your freezer section. Buy what is on sale. Even better if you catch it yourself.
You can optionally amp up the flavor, and the price, by adding fresh peeled shrimp, canned lump crab meat, or lumpfish caviar. Maybe some of those will be on sale at your market that day?
Add corn on the cob and you have a perfect outdoor summer meal. Serve with Classic Creamy Coleslaw and Bloody Caesars.
