Sloppy Joes

Sloppy Joes, with a sweet and tangy sauce, will easily satisfy that weekend warm weather craving when you don’t want to spend a lot of time at the stove.

Perfect with corn on the cob. Eat everything with your hands. Serve with lots of napkins.

Get the buns nice and toasty so they don’t get soggy.

Ingredients

  • 1 tablespoon lard

  • 1 lb ground beef

  • 1 yellow onion, diced

  • 1 poblano pepper, diced (optional, for a little kick)

  • 1 tablespoon chopped garlic from a jar

  • 2/3 cup ketchup

  • 2 tablespoons tomato paste

  • 1 tablespoon Dijon mustard

  • 1 tablespoon brown sugar

  • 1 tablespoon white vinegar

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon hot smoked paprika

  • sea salt

  • freshly ground black peppercorns

  • 4 sesame seed buns, toasted

Directions

  • Add ketchup, tomato paste, mustard, brown sugar, vinegar, Worcestershire sauce, and paprika to a bowl. Stir well to combine. Set aside.
  • Heat a cast iron skillet over very high heat and add the lard.
  • Add beef and brown. Stir with a fish flipper and break chunks apart. Transfer to a plate lined with paper towels.
  • Reduce heat to medium high.
  • Add onion and optional poblano pepper to skillet an cook until onion is translucent.
  • Add garlic and cook until fragrant.
  • Add beef back to skillet.
  • Add sauce mixture. Stir well.
  • Taste and correct seasonings, including adding any salt or pepper.
  • Cook for about 10 minutes more, until mixture has thickened.
  • Remove from heat and serve over toasted sesame seed buns.
