Salmon Salads or Toasted Sandwiches

Canned salmon is easy to prepare, moist, and the bones are soft and edible for that extra calcium. Great for brunch or lunch.

Canned salmon is so much healthier than tuna. Sadly, tuna has a lot of mercury in it these days in consumers are warned to limit how much they eat. No requirement to put it on the label.

Salmon Salads Or Toasted Sandwiches

Ingredients

  • 3 oz cream cheese, softened

  • 1 tablespoons Kewpie mayonnaise

  • 2 tablespoons Meyer lemon juice

  • 2 tablespoons chopped frresh dill

  • 1/2 teaspoon freshly ground peppercorns

  • 1 cup finely chopped celery

  • 1 tablespoon capers, drained & chopped

  • 1 can (14.75 oz) pink salmon, drained

  • 2 teaspoons Spanish sweet smoked paprika

  • lettuce

  • 8 slices toasted bread

Directions

  • Use a fork to mix first nine ingredients together in a bowl.
  • To make salads, arrange lettuce on plates and scoop salmon salad on top. Sprinkled paprika over. Garnish with lemon slices.
  • To make sandwiches, arrange lettuce on toasted bread slices and scoop salmon salad on top. Sprinkled paprika over. Top with second toasted bread slice. Cut either diagonally or into four even squares, which makes it easier to eat without the salad coming out when you bite it.
