Scallop and Uni Sashimi Tasting Spoon

This simple yet elegant single-bite appetizer can be made in minutes. Tender, sweet ocean scallops are fantastic in raw dishes. They melt in your mouth. The rich, creamy, umami, ocean flavor of uni is a perfect compliment. The caviar adds salt, crunch, and color.

Tasting spoons are single or one-bite appetizers served on a spoon. They are perfect for sashimi because the chef can decide the dipping sauce and wasabi. They can also be called canapés, although those traditionally are finger foods. Soy Sauce Eggs (Shoyu Tamago) would be considered canapés.

Scallop and Uni Sashimi Tasting Spoon

This simple tasting spoon combines tender, sweet ocean scallops and rich, creamy, umami, ocean flavor of uni. The caviar adds salt, crunch, and color.

Ingredients

  • 1/2 teaspoon tamari or soy sauce, I use low sodium

  • 1/2 teaspoon ponzu sauce

  • 1/4 teaspoon prepared wasabi

  • 2 fresh, cold sea scallops

  • a few tiny cut sea vegetables (seaweeds)

  • 2 uni

  • 1/2 teaspoon salmon roe

  • 1/4 teaspoon black capelin or lumpfish roe

Directions

  • Add 1/2 of the samurai and ponzu sauces to each spoon.
  • Use your finger to place a tiny smudge of wasabi on one flat side of each scallop. Carefully place the scallops wasabi side down on each spoon, taking care not to tip the spoon.
  • Use kitchen tweezers to place a few tiny pieces of seaweed on each scallop.
  • Use chopsticks to gently transfer an uni to each spoon.
  • Use kitchen tweezers to gently transfer the salmon and then the caplan roes to each spoon.
  • Serve immediately.
