Crudo is Italian and Spanish for raw and is a dish of uncooked ingredients; usually fish, shellfish, or meat with some sort of dressing. Although crudo and sashimi both call for raw foods, sashimi is thinly sliced and is focused on the fish. Crudo is made with other ingredients to highlight the raw seafood, the focus is not solely on the raw meat or fish. It will typically have some sort of dressing. It can simply be extra virgin olive oil and salt or something with more ingredients such as an acid or herbs.

Ingredients

  • 1 tablespoon Kewpie mayonnaise

  • 1/2 teaspoon extra virgin olive oil

  • 6 slices watermelon radish

  • 6 large sea scallops

  • 6 uni

  • 3 teaspoons red lumpfish caviar

  • 6 slices fresh sweet or hot red pepper

  • edible flower petals

Directions

  • Whisk mayonnaise and olive oil in a small bowl.
  • Arrange radish slices on a pretty plate. Put a small dollop of the mayonnaise olive oil mixture over each.
  • Carefully place a scallop, an uni, and some caviar on top of each. Uni can be omitted if you can’t get it or don’t care for it but I strongly urge you to try it.
  • Add the red pepper slices.
  • If you don’t have access to edible flower petals use another garnish if you like but be careful about changing the flavor of the dish. It would need to be mild.
