Skillet Seared Pork Shoulder Steaks

This inexpensive yet delicious thinly sliced, tender pork cut cooks in minutes. Pair with a vegetable and a starch for a quick dinner after a long day.

Pork shoulder steaks are cut from the pork shoulder near the neck. They usually include part of the shoulder blade bone so they may be labeled pork shoulder blade steaks.

These also make terrific leftovers for other dishes. Serve the steaks with rice and use leftovers to make pork fried rice.

Ingredients

  • 2 pork shoulder steaks

  • sea salt

  • freshly ground peppercorns

  • 1 teaspoon extra virgin olive oil

Directions

  • Season the steaks with salt and pepper.
  • Heat oil in a large cast iron skillet over high heat until it begins to shimmer.
  • Sear each side of the pork steaks for about 3 mins, then check the internal temperature with a high quality instant read thermometer. They should measure 145°F in the thickest part.
  • Tent with foil and let rest before slicing.
