Summer Tomato and Cucumber Salad

The perfect side dish for any outdoor meal. Easy to prepare. Great in hot weather. Choose tomatoes in season.

Whether you are planning your Memorial Day meal or thinking about July 4th; this salad is quick and easy, colorful, crunchy, and delicious!

Be sure to chill it if the weather is warm. Pair it with iced tea over lots of ice. It’s perfect for grilled hamburgers.

The vinegar mellows the onions. The cucumber adds crunch and color. I prefer colorful and tasty heirloom tomatoes.

Ingredients

  • 1/4 red onion

  • 1.5 tablespoons champagne vinegar

  • sea salt

  • freshly ground black peppercorns

  • 1 cucumber

  • 2 fresh tomatoes

  • freshly chopped parsley (optional), OR

  • freshly chopped cilantro (optional)

Directions

  • Slice red onion thinly.
  • Add champagne vinegar, a dash sea salt, and a small grind of black peppercorns.
  • Slice cucumber thinly and add to onion mixture.
  • Roughly chop tomatoes and stir in to salad.
  • Chill in the refrigerator for about 20 to 30 minutes.
  • Optionally add parsley or cilantro, depending on the main dish.
  • Serve immediately.
