Fruit Salad with Dragon Fruit and Mint

Add whatever fruits you have on hand to the dragon fruit and mint. This salad has bananas, apples, peaches, and oranges.

Fruit Salad with Dragon Fruit and Mint

Ingredients

  • 1 dragon fruit

  • 4 fresh mint leaves

  • 1 banana

  • 1 apple

  • 1 peach

  • 1 valencia orange

  • 1 Meyer lemon

  • agave nectar (not syrup)

Directions

  • Peel and cube dragon fruit.
  • Chiffonade cut mint leaves. Leave one of them whole for garnish if desired.
  • Peel and cube or slice the rest of your fruit.
  • Gently mix all fruit together in a bowl.
  • Squeeze juice from the lemon and measure it.
  • Measure half as much agave syrup and whisk into the lemon juice. Mix into fruit salad.
  • Chill in refrigerator for at least 1 hour.
