Avocado Mayonnaise Spread

Elevate your sandwiches by trying this with sandwiches on which you would normally use plain mayonnaise. Easily made in minutes.

Spread on toasted bread rounds/crostini for a wonderful appetizer. Some optional toppings are red pepper flakes, crumbled bacon, grilled tomatoes, fresh basil, fresh parsley, fresh dill, cucumber slices, red onion slices, roasted garlic, shrimp, lump crab meat, smoked salmon or trout, canned fish, roe, grilled mushrooms, and hard boiled quail eggs.

A great spread for your sandwiches that adds healthy avocado with mayonnaise.

Ingredients

  • 1 very ripe avocado; peeled, seeded and mashed well with a fork

  • 1/2 cup Kewpie mayonnaise

  • 1 tablespoon freshly squeezed Meyer lemon juice

  • sea salt

  • freshly ground black peppercorns

  • 1 tablespoon finely chopped fresh basil (optional)

Directions

  • In a small bowl, whisk avocado, mayonnaise, and lemon juice. Season with salt and pepper to taste.
  • Stir in basil, if using.
