Crème de Menthe Chocolate Parfaits

A fancy looking dessert with layers of flavor and a surprise at the bottom. Pretty easy, even without store mixes and whipped cream shortcuts.

The Crème de Menthe gives it a really nice kick.

Crème de Menthe Chocolate Pudding Parfaits

Ingredients

  • Chocolate pudding
  • 2/3 cup cane sugar

  • 1/4 cup cocoa powder

  • 3 tablespoons corn starch

  • 1/4 teaspoon salt

  • 2 1/4 cups whole milk

  • 2 tablespoons unsalted butter, room temperature

  • 1 teaspoon real vanilla extract

  • Parfaits
  • 1 cup Irish cream liqueur

  • 1 cup whole milk

  • 3 cups homemade whipped cream

  • 8 tablespoons Cremé de Menthe liqueur

  • 4 tablespoons hot fudge

  • 4 homemade or store-bought fudge brownies, crumbled

  • 1 pint French vanilla ice cream, softened

  • 6 Mint Oreos, crushed

Directions

  • Chocolate pudding
  • Place a saucepan over medium high heat
  • Add and stir together sugar, cocoa, cornstarch, and salt in medium. Gradually stir in milk.
  • Cook, stirring constantly, until mixture boils. Boil and stir for 1 minute. Remove from heat.
  • Stir in butter and vanilla.
  • Parfaits
  • In a bowl, combine chocolate pudding, Irish cream liqueur, and milk. Whisk several minutes until light and fluffy. Let stand to set.
  • In a another bowl, whisk together whipped cream and Cremé de Menthe.
  • Spoon pudding mixture and whipped topping mixture into separate piping bags or plastic storage bags with a small corner cut off.
  • Fill parfait cups or cocktail glasses. Layer hot fudge, brownies, then ice cream about 1/3 of the way full.
  • Pipe in alternating pudding mixture, whipped cream mixture, and crushed Oreos.
  • Optionally garnish with raspberries and fresh mint leaves for Christmas.

  1. Can this recipe be made and frozen ahead of time?

  2. I haven’t done this, but I would think it could be done with a small change. Note,though,that the fudge won’t be hot. The result will be more of a frozen dessert,like a layered ice cream sundae with whipped cream on top.

    Prepare everything except the whipped cream and freeze it. When ready to serve, defrost the parfaits and top with whipped cream and Oreos.
