Fresh Summer Fruit Salad with Tomatoes, Basil, and Mozzarella Cheese

Who doesn’t love a Caprese salad? Ripe sliced peaches and red seedless grapes add sweetness and color. Perfect when everything is in season.

Tomatoes are fruits. Other fruits may be substituted or added, but try not to add too much.

Ingredients

  • 2 peaches, pitted and sliced thinly

  • 2 cups seedless red grapes

  • 2 red heirloom tomatoes, chopped coarsely

  • 4 fresh basil leaves, ripped or chopped coarsely

  • 1 teaspoon sea salt

  • 1 tablespoon champagne vinegar

  • 6 soft, cherry size mozzarella cheese balls, torn into pieces

  • 2 tablespoons extra virgin olive oil

Directions

  • Divide and arrange first five ingredients among salad plates.
  • Sprinkle sea salt over each.
  • Drizzle champagne vinegar over each.
  • Divide and arrange mozzarella cheese over each.
  • Drizzle a bit of olive oil over each.
  • Serve at room temperature or slightly chilled.
