Celery Dipping Sauce

A very versatile sauce that can be used on pretty much everything. If it tastes good with celery, it tastes great with this.

I invented this to go with barbecued chicken wings because they are often served with celery and a dipping sauce. I next tried it with skillet seared cherry tomatoes. That’s a match made in heaven similar to peanut butter and chocolate. It can be served with raw and cooked vegetables as a vegetable dip and pretty much any protein using any cooking method. Try it as a sandwich spread, on burgers, or as a French fry dipping sauce.

The soy sauce makes it look a little dark but it adds the umami component which amplifies the flavor of the food.

Celery Dipping Sauce

Ingredients

  • 1 tablespoon extra virgin olive oil

  • 2 stalks celery, including leaves; thinly sliced

  • 3 green onions, finely chopped

  • 1 tablespoon sherry vinegar

  • 1 tablespoon soy sauce

  • 2 tablespoons unsalted vegetable broth

  • 1/4 cup parsley leaves, loosely packed

Directions

  • Place a cast iron skillet over medium high heat.
  • Add olive oil and heat until it shimmers.
  • Add celery and onions. Saute until soft, but do not brown.
  • Add sherry vinegar, soy sauce, and broth; bring to a boil.
  • Remove from heat and cool.
  • Transfer the contents of the skillet to the cup attachment of a bullet blender.
  • Add parsley and pulse until smooth.
