Creamy Italian dressing made with fresh herbs is perfect for a fresh garden salad.

Ingredients

  • 1/4 cup Kewpie mayonnaise

  • 2 tablespoons plain Greek yogurt

  • 2 tablespoons white wine vinegar

  • 2 tablespoons extra-virgin olive oil

  • 1 teaspoon garlic, from a jar

  • pinch sugar

  • 1/4 teaspoon sea salt

  • freshly ground black peppercorns

  • 1 tablespoon chopped fresh parsley

  • 2 teaspoons chopped fresh oregano

  • 4 tablespoons finely grated fresh parmesan (optional)

Directions

  • Whisk the mayonnaise, yogurt, vinegar, olive oil, garlic, oregano, sugar, salt and a few grinds of pepper in a medium bowl.
  • Stir in the parsley and oregano.
  • You can add Parmesan cheese at this step or wait and freshly grate it over the salad, which is my preference.
  • Taste and correct seasoning with vinegar, salt, and pepper. Chill 1 hour.

Notes

  • Feel free to add more freshly chopped herbs such as basil. My preference is to not have too many herbs in the dressing. You can always chiffonade cut some basil and add as a garnish to the salad.
