Easiest Roasted and Peeled Beets

These will peel easily. No more staining your hands. Eat as is or use in any number of dishes: pickled, appetizers, soups, salads, and sides.

Beets, how I love you. So delicious. So versatile. So easy to grow. So healthy. They are high in folate (vitamin B9), manganese, potassium, iron, and vitamin C.

Beets have been associated with numerous health benefits, including improved blood flow and lower blood pressure. Beets help your heart and lungs work better during exercise. Many of these benefits are due to their high content of inorganic nitrates. They’re one of the few vegetables that contain betalains, a powerful antioxidant that gives beets their vibrant color. Betalains reduce inflammation and may help protect against cancer and other diseases.

Roasted Beets

Easy to roast and peel beets.

Ingredients

  • 4 medium beets

  • extra virgin olive oil

  • freshly ground black pepper

  • 2 spigs rosemary

Directions

  • Preheat oven to 450°F.
  • Make sure they’re all about the same size. Cut the bigger ones if needed. Wash, then slice off the small root and top with greens. Reserve greens for other dishes.
  • Place the beets in a Dutch oven. Toss with extra virgin olive oil until well coated. Sprinkle with freshly ground black pepper. Toss in some rosemary sprigs. Add 1/2 cup of filtered water,
  • Cover tightly and roast at 450°F for about 45 minutes, until a sharp knife slides through easily.
  • Remove from oven and as soon as they are cool enough to handle, hand peel under cold running water. This also helps to keep your hands from staining.
