Canned Wild Sardines with Cucumber on Crispbread

Wild sardines on crunchy multigrain crispbread with cucumbers, mayo, and dill make a quick superhealthy snack. Make this instead of reaching for junk food.

Superhealthy wild sardines on crunchy crispbread with cucumbers, mayo, and dill make a quick snack.

Ingredients

  • 2 Wasa multigrain crispbreads

  • 4 – 6 thin slices peeled cucumber

  • 4.4 oz ocean-friendly can wild sardines in water

  • 1/2 Meyer lemon, cut into wedges

  • 2 tablespoons Kewpie mayonnaise (or your favorite mayonnaise in a squeeze bottle)

  • 1/4 teaspoon Piment d’Espelette (substitute paprika and cayenne pepper)

  • 1 sprig dill, coarsely chopped

Directions

  • Place cucumber on the crispbreads. Arrange sardines on top.
  • Squeeze some Meyer lemon over and Kewpie mayonnaise over that.
  • Sprinkle Piment d’Espelette over.
  • Top with dill.
