Ice Cold Homemade Lemonade by the Glass

Nothing is as refreshing on a hot day as an ice cold glass or two of homemade lemonade. Add a splash of rum and make it a cocktail.

Ice Cold Homemade Lemonade by the Glass

Ingredients*

  • 1 tablespoon honey

  • 1/4 cup very hot water

  • 1 Meyer lemon, zested and juiced

  • 2 cups ice cubes

  • 1 leaf mint (optional)

  • rum (optional)*

Directions

  • Chill one empty glass or mason jar in the freezer.
  • Stir together honey and hot water in a measuring cup until the honey is dissolved.
  • Stir in the lemon juice, zest, and cold water.
  • Coarsely crush ice and optional mint in a Ninja blender.
  • Pour lemon juice honey mixture over and pulse a few times.
  • Fill frosted glass or pint mason jar with lemonade and ice.
  • Garnish with a lemon slice and mint, if desired.

Notes

  • *If you’d like to have it taste more like a mojito, substitute two limes for the Meyer lemon and don’t omit the mint. Leave room in the glass for the rum and stir thoroughly.
