Watermelon Margarita

Possibly the most refreshing fruit margarita. Muddled mint adds to the cool flavor. Perfect for a summertime barbecue. Serve icy cold.

Watermelon Margarita

Ingredients

  • 3 limes, 2 juiced

  • 2 tablespoons sea salt

  • 1 tablespoon sweet smoked paprika

  • 4 sprigs mint

  • ½ cup blanco tequila, divided

  • 5 cups cut seedless watermelon

Directions

  • Chill 2 glass tumblers in freezer.
  • Rub a lime wedge around the rims of glasses. Sprinkle salt and paprika on a small plate. Dip each glass into mixture to coat the rims.
  • Place 1 mint sprig in each glass. Ise a muddler or similar such as the back of a wooden spoon to crush well to release oil.
  • Stir 1/4 cup tequila into each glass.
  • In a blender, combine watermelon, juice from 2 limes, and 2 cups ice. Pulse blend until smooth.
  • Pour watermelon mixture into glasses and stir.
  • Garnish with remaining mint sprigs.
  • Serve immediately.
