Ingredients
1 ripe red tomato
2 small mozzarella balls
1 sprig fresh basil
1/2 tablespoon extra virgin olive oil
sea salt
Directions
- Use a small paring knife to make an X on the top of the tomato. Drop it in boiling water for about 20 seconds until the skin starts to split open. Remove with a slotted spoon. Cool and peel.
- Place peeled tomato on a plate. Arrange the two mozzarella balls. Pinch the top of the basil sprig and place it on tomato. Tear more leaves from the basil sprig and arrange on plate.
- Drizzle with olive oil. Sprinkle with a small amount of salt. Do not over salt it. You can add more but you can’t take it away.
