Ingredients

  • 1 ripe red tomato

  • 2 small mozzarella balls

  • 1 sprig fresh basil

  • 1/2 tablespoon extra virgin olive oil

  • sea salt

Directions

  • Use a small paring knife to make an X on the top of the tomato. Drop it in boiling water for about 20 seconds until the skin starts to split open. Remove with a slotted spoon. Cool and peel.
  • Place peeled tomato on a plate. Arrange the two mozzarella balls. Pinch the top of the basil sprig and place it on tomato. Tear more leaves from the basil sprig and arrange on plate.
  • Drizzle with olive oil. Sprinkle with a small amount of salt. Do not over salt it. You can add more but you can’t take it away.
