Beets and goat cheese are a match made in heaven. The sweet and sour of the oranges and strawberries make a delicious addition.

Ingredients

  • 3 roasted medium beets, recipe here

  • 3 tablespoons extra virgin olive oil, divided

  • 1/2 cup filtered water

  • 1 cup mixed lettuce greens

  • 1 cup arugula

  • 1 tablespoon white balsamic vinegar

  • 1 large juicy orange

  • sea salt to taste

  • freshly ground black peppercorns

  • 4 medium strawberries, halved or quartered

  • 4 tablespoons goat cheese (helps if it is slightly frozen)

Directions

  • Cut beets in half and then cut slices in the other direction until you have fork sized pieces.
  • Arrange greens and arugula on a plate. Sprinkle olive oil and then balsamic vinegar over greens.
  • Sprinkle with salt and squeeze juice of 1/2 orange over.
  • Arrange the beets over the greens, then oranges and strawberries.
  • Break the goat cheese into pieces and arrange on top.
  • Sprinkle with freshly ground black pepper to taste.
