Caprese Inspired Mexican Fiesta Salad

The inspiration is cherry tomatoes, cilantro instead of basil, and Queso fresco instead of mozzarella, except that I used feta from my Tiny Pantry, which is very similar to queso fresco. The olive oil stays the same.

It looks like a fiesta to me! It even has the colors of the Mexican flag! 🇲🇽

Mexican fiesta salad.

Ingredients

  • 1/2 cucumber, halved lengthwise thinly sliced

  • 2 cups mixed cherry tomatoes, halved

  • 1/2 mango, cubed

  • 2 tablespoons extra virgin olive oil

  • 2 slices red onion, diced

  • 1/4 jalapeño, ribs and seeds removed, minced

  • 1 lime, juiced

  • 1/4 cup chopped cilantro

  • 1 cup crumbled feta cheese

  • 1/2 teaspoon chili powder

Directions

  • Combine cucumbers, tomatoes, and mango; divided between two plates.
  • Drizzle 1 tablespoon olive oil over each.
  • Arrange red onion and jalapeño over each.
  • Squeeze lime juice over each.
  • Top each with cilantro and feta cheese.
  • Sprinkle a little chili powder over each.

    Do you mean 1/4 CUP chopped jalapeño?

  2. Oh no! 1/4 of a jalapeño pepper.
    You can adjust for your own heat tolerance and tastes.
