Tomato smoothies are a refreshing cold drink to enjoy with a brunch or sitting outside on a warm day. Perfect when tomatoes are ripe and juicy.

Garnish with mint leaves, dill sprigs, Meyer lemon slices, or go wild and garnish with young celery stalks.

Enjoy with cold freshly shucked Raw Oysters On The Half Shell With Cucumber Mignonette or Cocktail Sauce. Or a cold Creamy Old Bay Shrimp Salad Or Sandwiches.

Ingredients

  • 4 cold heirloom tomatoes, halved and stem removed

  • 4 tablespoons chopped dill fronds

  • 4 cups peeled, seeded, and coursly chopped cold cucumber

  • 2 Meyer lemons, juiced

  • 2 tablespoons Worcestershire sauce

  • 2 teaspoons agave nectar

  • 1 teaspoon celery seed

  • 2 cups small ice cubes

  • mint leaves, dill sprigs, Meyer lemon slices, and young celery stalks for garnish (optional)

Directions

  • Add tomatoes and dill in 72 oz pitcher blender. Blend until smooth.
  • Add cucumber and blend until smooth.
  • Add remaining ingredients and blend until smooth.
  • Serve immediately in chilled glasses. Garnish with a mint leaf, a dill sprig, a Meyer lemon slice, or go wild and garnish with a young celery stalk.
