Salsa Verde Fresca

This is called fresca because the tomatillos and onions are charred. Traditional Mexican salsa verde is boiled.

EQUIPMENT: Ninja Bullet, blender, or food processor

Ingredients

  • 1 1/2 lb tomatillos

  • 1 onion, halved

  • 3 cloves garlic, smashed

  • 1/2 cup cilantro leaves, packed

  • 1 lime, juiced

  • 2 jalapeño peppers, sliced

  • sea salt

Directions

  • Soak the tomatillos in water for two minutes then remove the papery husks.
  • Place a large cast iron skillet over very high heat.
  • Add tomatillos and onion halves. Use tongs to move them around until they are aromatic and are slightly charred. Do not let the tomatillos burst.
  • Remove from heat and let cool.
  • Coarsely chop the onion.
  • Put the onion and garlic in a blender and pulse a few times. Add the tomatillos and the remaining ingredients and pulse until desired consistency. Taste and add more salt if needed.
