Bacon, Lettuce, and Tomato on Toasted Sourdough with Avocado Mayonnaise Spread

A BLT sandwich with a bacon weave and avocado mayonnaise sandwich spread that takes it to the next level.

Ingredients

  • 6 slices thick-cut bacon, cut in half crosswise

  • 4 slices sourdough bread

  • 1/4 cup Avocado Mayonnaise Sandwich Spread or Kewpie mayonnaise

  • 1 ripe red tomato, sliced crosswise into thin rounds

  • sea salt

  • freshly ground black peppercorns

  • 6 butter or red-tipped lettuce leaves, or half and half butter lettuce and arugula leaves

Directions

  • Place a cast iron skillet over low heat. Add 6 of the half slices of bacon and weave the slices by alternating them over and under, similar to a lattice pie crust but don’t leave spaces between the slices. Cook until browned on first side, about 15 minutes. Use a fish flipper to turn over and continue cooking until bacon is browned on bottom side. Use a fish flipper to transfer bacon weave to a paper towel lined plate and set aside. Repeat for the remaining 6 half slices of bacon.
  • Pour all but one tablespoon of bacon fat from the skillet. Reserve the extra bacon fat in case it’s needed.
  • Increase heat to medium and toast a sourdough bread slice in bacon fat, until nicely toasted on first side. Flip and brown second side. Complete for 3 remaining slices, adding additional bacon fat if needed.
  • Spread each sourdough toast slice generously with Avocado Mayonnaise Sandwich Spread, Kewpie, or your favorite mayonnaise on one side.
  • Place a bacon weave on two of the sandwich halves.
  • Arrange the tomato slices over each. Season with salt and pepper.
  • Top with lettuce leaves.
  • Finish sandwiches by adding second slices of toast, Avocado Mayonnaise Sandwich Spread or mayonnaise side down. Press down lightly, cut in half, and serve immediately.
