Cucumber Raita

Serve chilled raita as a refreshing side dish on any very warm summer day. This also pairs very well with spicy food, including barbecue.

Adding salt to yogurt removes the sour flavor.

Since it was hot out I added cold cubed seedless watermelon. Delicious.

Ingredients

  • 1 teaspoon cumin powder

  • 1 cup peeled and finely chopped cucumber

  • 1 cup organic Greek yogurt

  • 1/2 teaspoon sea salt

  • mint garnish

Directions

  • Place a small cast iron skillet over medium heat and add cumin.
  • Toast stirring constantly until cumin is fragrant.
  • Remove from heat.
  • Combine the cucumber, yogurt, cumin, and salt.
  • Chill in the refrigerator for at least 30 minutes.
  • Garnish with mint.
